Peace and Pie


Ok, so the U.S. of A just killed a major terrorist leader. Am I the only one who feels a little saddened at the jubilation of our country’s citizens over it?

Maybe it’s because I live in a small-liberal-arts-college bubble.

Ok, that’s most definitely why.

My neighbors at the Air Force Academy are having lots of fun celebrating. Amazing how we’re in the same city, but it feels like worlds away! Their celebrations have been a little tamer than other colleges, at least…


But honestly? I don’t like death. In any, any case. Not even in the name of justice. Call me a peace-loving hippie, but in my ideal world, everyone guilty of a crime would be locked away in a box somewhere,Β  put through some kind of living-purgatory-type-experience (I’m thinking LOST as a model), and released into existence again when they’re truly sorry for what they did.

Small liberal arts college. I did warn you.

But just because my college is full of liberal tree-huggers doesn’t mean we won’t turn this into an excuse to party on a Monday night. My school is in “8th block,” a.k.a. the last quarter of the semester. I still can’t get the glitter out of my hair from this shindig:

Good news: my red jacket is now flour-free and ready to wear again.

Tonight, however, I need to catch up on sleep, so I will leave you with my food-related hopes and dreams! Ready?

In my ideal world, everyone would realize how delicious the combo of sprouts, avocado, & hummus is, and I’d be able to let animals roam free without fear of humans eating them.

In my ideal world, I would have the option to go back to my pre-paid campus dining hall whenever I didn’t feel like scrounging in my fridge.

There would be more salads. Period.

There would be lots of sprouts, because for some reason, when I eat them I feel like I’m channeling the Buddha. (where did I make that association, I wonder?)

I would know the Chobani company personally, just to make sure they’re treating their dairy cows right. (Because if it wasn’t for greek yogurt, I’d easily be vegan all the time!)

I would make the whole world see that green monster smoothies are absolutely delicious.

(I might have forced this down the throats of several of my teammates one pre-rugby-game morning. No one gagged, that’s a start!)

One of my favorite cereals of all time, combined with the more new-age almond milk.

And…my roomie would surprise me with wonderful baked goods every night! (It’s a wonder what an unexpected pie can do for a student on the verge of a breakdown!)

And similar to bad criminals, bad weather would go into hiding, think about what it’s done to the hearts and minds of sun-loving girls like me, and only come back out for holiday festivities and the occasional ski trip.

What I Ate Wednesday!

No, but really, this afternoon I was shaking. Why, you ask?

Dun-dun-dun-dunnnnnnnn!

A tall latte with soy milk.

Let me explain! I used to get soy lattes at the school coffee shop all the time. They’re so delicious and nutritious (yes? i think so). But since I’m on a commuter meal plan this semester and most of my food I prepare at home, I haven’t been around campus much to indulge in coffee. Nor have I really needed it! That’s a good sign, right?

Well, after a quick elliptical workout this morning, I was really craving a soy latte! I noshed on a ginormous (it’s a real word, go with it) apple while getting ready for school:

Did you know that apples are more effective in waking you up than caffeine? For real, look it up!

And then sipped on my latte before class.

Other than being a little hungrier than usual for lunch, it meshed with me very, very nicely. I didn’t even feel the caffeine; just soymilk + coffee goodness! I attended a lunch held by the political science department where I had ordered (teehee…so spoiled) a huge salad from the nearby (amazing) deli, Wooglin’s.

Then, after my Arabic adjunct had ended around 4 PM, I started…shaking. Regardless of the fact that I had just watched a 2-hour Arabic movie (“State of Love.” it was great!), my heart would not stop racing!

I’m not sure when the last time I had coffee was, but it’s definitely been at least a month, perhaps even 2?? It’s amazing what caffeine withdrawal can do!

One of coping methods is making to-do lists. I might never look at this list again, but hey, A for effort!

Thank goodness I had rugby practice at night to solve THAT problem πŸ™‚

I usually don’t make “cute food” to put on the blog, but since I was using grapes…I just couldn’t resist.

Teehee.

Practice was hard and good. Good and hard, whatever you prefer.

(There were a lot of dirty jokes over dinner, can you tell? πŸ™‚ )

I simply HAD to get school food tonight, because it was SUSHI TUESDAY!

My roll had carrot, cucumber, asparagus, red pepper, and tofu.

Yummm. I still haven’t mastered theΒ eat-each-piece-in-one-bite-to-avoid-looking-like-a-gross-slob technique, but so long as it all winds up in my belly, I’m a happy sushi-eater πŸ™‚

My other rugby teammates compensate by making artwork out of soy sauce.

I usually get some variation on the avocado roll (with tofu if they have it), but since I had already had some avocado in my salad today, I opted for more veggies instead. I’m trying to focus on variety!





The Whole Day


Since my trip to Zumba last night required into a farther section of the city, I figured I might be near a Whole Foods once I got out.

I was right. 8 Minutes Away! Too close to resist.

I limited myself to 3 items (which I convinced myself I couldn’t get anywhere else): protein powder, daiya cheese, and a huge jar of crunchy organic peanut butter. All were very necessary: my protein powder just ran out, I’ve been wanting to try Daiya’s vegan cheese forever, and all of my roommates burn through crunchy peanut butter. I don’t know why they don’t sell the organic (or at least natural) crunchy peanut butter in big jars at our local supermarket, but I found it at Whole Foods! All is well now.

And there was great rejoicing! Vanilla green monsters are just as tasty πŸ™‚

With spirulina, to boot! I’ve been meaning to get this alga (which is apparently the singular form of algae? Oho) into my life. It’s convenient to have it right in my protein powder!

Although it annoys me that there was such a gap from the top to the contents…

It that typical?

Usually I’m too late rushed to eat my breakfast at home, but I slept in today so I had some time! I tried to eat around 9 so I’d actually have an appetite for the Religion Department Lunch 3 hours later.

Do y’all have Jimmy Johns subs where you are? I’m not a sub person, but these are pretty good. I just wish they had more bread choices! I had 1/2 a veggie sub, which contains sprouts (the best part!), tomatoes, cucumbers, lettuce, & provolone cheese.

I was productive for a while this afternoon, then took a break for a quick treadmill run. I think my school’s “girl” gym is overheated; I get cold really easily, but as soon as I move in there I’m drenched in sweat immediately! I did a modified run since I had rugby practice tonight; it was about 40 minutes total.

5 minutes jog (warm up), 6.0 mph

4 minutes walk @ 7.5% incline, 4.0 mph

5 minutes jog @ 1.0% incline, 6.5 mph

Repeat those two 2x

5 minutes walk (cool down), 3.8 mph

I came home to refuel with some protein & carbs!

The very last of the plain greek yogurt, 1 chopped green apple, 2 small chunks peanut butter, cinnamon

I tried to do reading, but was distracted my the usual roommates’ nap interference plans and charming conversation.

I threatened to send these into a male modeling agency. They weren’t into it.Another roommate found the Daiya cheese and graciously decided to test it out!

“Melts and stretches? I’m intrigued.”

What’s the verdict, Lo?

“That works. I could so be a vegan.” πŸ™‚

A few hours (and prunes! I’m so glad y’all like them too!!) later, I prepared to venture out into the single-digit temperatures for a quick rugby practice.

Despite the fact that the only form of lip balm I could find was “merlot lip shimmer,” I came to practice prepared!

For post-practice dinner, more of the spaghetti squash that never ends. I think there’s only one serving left, finally!

I see what all the fuss is about with this Daiya stuff! It’s not exactly the same as cheese, but it’s very similar in texture and the taste is phenomenal.

Question: Do you like green apples? I always find them too tart, but when you need an apple, you need an apple.

21 & Other Events


Sup y’all! It was hilarious to read about your 21st birthday celebrations, even if you can’t remember them too well! I hope you can understand why it’s taken me so long to bounce back from mine…hehe.

Superbowl weekend was nicely balanced with work and play.

I partied hard (a.k.a. attended multiple house parties, hugged lots of people and stayed out until the wee hours) on Friday night, and it was just what I needed. My school is small, but there are so many kids I haven’t seen in the longest time! I even found out that one of my roommates from freshman year (I was in a triple) is getting married! Ahhh! 2 years can change so much!

I don’t really recall what I had for breakfast Saturday morning oh, that’s right! I didn’t wake up until 11 and wasn’t hungry till well past 1. But I rallied with my first attempt at socca!

Are you intrigued? Hmm?

I knew socca was a favorite of the Pure2Raw twins and the Fitnessista; they said it was easy, so I pulled my garbanzo bean flour out of the pantry and hopped to it!

I mixed equal parts garbanzo bean flour and water (1/2 cup each), then added salt, pepper, rosemary, thyme

(I definitely didn’t use thyme. My fingers were just itching to write a Simon and Garfunkel song!)

I schlopped about a tablespoon of coconut oil on the skillet and poured the batter on

I’m not coordinated enough to make multiple pancakes (as you’ll see later), so I made one big one!

I just cooked each side for a few minutes until it look toasted. I sauteed a red bell pepper in balsamic vinegar to go along with it. Good decision!

The socca was really delicious, and really filling! I guess that’s because each serving of garbanzo bean flour has 6g protein, 18g of carbohydrate (of which a hefty 5g is fiber) and an impressive 10% of the daily value for iron, and I had 2 servings! I’ll have to make this a habit; not only did it taste delicious, but the apartment smelled amazingly herby.

I went to a free hot yoga class with a friend later in the afternoon. Have y’all ever tried hot or Bikram yoga? I don’t do it often; I prefer yoga that’s more touchy-feely, inspirational, and flowing, preferably with some hipster music, candles and incense. The whole spiritual nine yards. To me, hot yoga feels more like I’m atoning for my sins by sweating buckets and holding postures for way longer than my attention span can take. But I have to admit, it feels great once in a while! There’s a CorePower yoga studio (do y’all have this chain in your state?) just minutes from campus, so I try to catch their free once-a-week hot yoga classes when I get the chance.

When I got home, I was dehydrated and starving! Good thing my muscles weren’t too tired, because I really wanted to make spaghetti squash. Here I am wrestling to cut it:

I even let my knife-happy roommate try to halve the squash. He gave up! He took a picture of me instead.

Eventually I worked that knife through that stubborn squash and got dinner on the table. I used Kath’s spaghetti squash method but I think I’m going to attempt a microwave cooking next time. I’m too impatient for the oven!

Later that night, when I tried to make oatmeal pancakes, I set off the smoke alarm.

Ok, so they were a little burnt. Oops?

Still delicious. In preparation for birthday celebrations, I did some late-night schoolwork (aka bible reading!) so I could relax the next day.

And relax I did! I woke up, did some Zumba, then headed to a superbowl party.

Grapefruit before I left. I mostly ate it because we have a grapefruit spoon, for once!

Packers colors?

 

Confession: I didn’t eat a lot of real food on superbowl day, so when I started birthday party #1 later that night, 2 shots went riiiiiight to me and I was pretty schwasty. But that’s appropriate for your 21st, right? My rugby team gave me one heck of a party; I’ve never felt so loved.

It’s also convenient that my teammates don’t need any convincing to drink on a Sunday night. What sports!

I headed home at 1:30 AM and went to class 8 hours later, fully coherant. Success!

Yesterday (the real birthday) the shenanigans were much more tame.

The only times I ever CRAVE bagels is after a night of heavy drinking. Luckily, someone had picked up everything bagels, my FAVORITE! I made do without cream cheese and put avocado on top.

(I don’t do that whole “I’m so hungover I can’t stand the thought of food” thing. When I’ve lost my appetite, I know something’s very, very wrong.)

Shake & Go


What up, bloggies! Happy Friday! Gosh knows I need it.

Guess what went down this morning? I…

  • did a super quick rugby weights sesh
  • fought with two separate ATMs
  • went downtown with friends to put the huuuge rent deposit on our HOUSE for next year
  • went to class and took a midterm!!

Then I came, home, took a shower, and plunged into a 2 hour nap. I wish it could be 3 hours (it is Friday, after all), but I’ve got ballet and then rugby to attend!! What a crazyhectic 24 hours!

Not the most photogenic breakfast, but it worked! I bought a sample packet of a Vega Shake & Go Smoothie a while ago, so I busted it out for this morning’s busyness. I bought the Choc a Lot flavor (because how could that be a bad choice?), added the powder into my water bottle, shook it up, and I was set! It wasn’t bad; I like my breakfasts to have volume, but with this I could walk, talk, and count absurd amounts of cash while I drank it. I ate the banana in the car ride back to campus. Perfect for when you have your hands full! Β  (Matt has a great review of them the smoothies here)

It was about noon when I got out of the shower, and I was quite hungry, but I knew I wanted sleep more. I ate an apple, dozed off, and now I’m slurping down a green monster (surprise! haha) for nutrition and easy digestion before ballet:

spinach, 1/4 avocado, 1/2 banana, 1/2 scoop chocolate protein powder, coconut milk, cinnamon

Hit the spot.

I’m so excited to be back to fridays that include both ballet and rugby! Similarly, I’m going to a fashion show and a hockey game tonight. Woohoo! Have a fantastic afternoon and evening!

Hours in the Day


 

Hey y’all! How was everyone’s Thursday?

In case you’re wondering about the title, today there were not enough hours in the day.

Usually, I’m pretty accepting of the 24 hours that comprise the time in which the Earth makes a single rotation on its axis.

(Confession: I just looked that fact up. I couldn’t remember if days had to do with the sun? or…the moon?)

Last night, things were deceivingly deliciously normal. I went to bed (teehee) with a brownie drowned in coconut milk:

(Not the best I’ve ever had, but a good compliment to the newest episode of Greek!)

I’ve been so, so good about going to the gym every morning during the school week, but this morning, it was not happening. Too little sleep and too much desire to stay immobile. Last Thursday, I also took it easy…I hate school-run yoga (the instructors are so boring and never figure out how to work the music!) but I took it that week anyway. Maybe I should just do the same every Thursday?

I cleaned my dirty self up with a white shirt, blue jeans, & uggs. So classically American! Oh, except for the exquisitely bold Jordanian keffiyeh around my neck.

I actually had an impromptu meeting with one of the school’s Arabic professors today. What a lucky coincidence! Mumtaz! [Excellent]

After class began the epic quest to find an off-campus house/get a lease signed for next year. Oy vey!

In short…lots of frustration, lots of politics, lots of unfortunate girl drama. We’re still on the edge of our decision, but I think we’ll pull through all right. Details later!

I finally got home at 3 PM (I had breakfast at (9:30 AM…thank goodness it was filling!) to make a quick lunch:

What a change from the past few days, right?

Asparagus, grape tomatoes, tempeh, & chickpeas, sauteed in olive oil & balsamic vinegar and topped with nutritional yeast. I also added in some ginger, garlic powder, and tarragon leaves while cooking. Yum!

Then I had to rush out again for more lease questing, a meeting, and a study group. My dinner was an apple and an orange since I was on the go all evening. Bad, I know! But now I’m home, stressed, and not hungry. All I want to do is read some lovely blogs, watch Desperate Housewives, and get the sleep necessary to both exercise and ace my midterm tomorrow.
