Peace and Pie


Ok, so the U.S. of A just killed a major terrorist leader. Am I the only one who feels a little saddened at the jubilation of our country’s citizens over it?

Maybe it’s because I live in a small-liberal-arts-college bubble.

Ok, that’s most definitely why.

My neighbors at the Air Force Academy are having lots of fun celebrating. Amazing how we’re in the same city, but it feels like worlds away! Their celebrations have been a little tamer than other colleges, at least…


But honestly? I don’t like death. In any, any case. Not even in the name of justice. Call me a peace-loving hippie, but in my ideal world, everyone guilty of a crime would be locked away in a box somewhere,Β  put through some kind of living-purgatory-type-experience (I’m thinking LOST as a model), and released into existence again when they’re truly sorry for what they did.

Small liberal arts college. I did warn you.

But just because my college is full of liberal tree-huggers doesn’t mean we won’t turn this into an excuse to party on a Monday night. My school is in “8th block,” a.k.a. the last quarter of the semester. I still can’t get the glitter out of my hair from this shindig:

Good news: my red jacket is now flour-free and ready to wear again.

Tonight, however, I need to catch up on sleep, so I will leave you with my food-related hopes and dreams! Ready?

In my ideal world, everyone would realize how delicious the combo of sprouts, avocado, & hummus is, and I’d be able to let animals roam free without fear of humans eating them.

In my ideal world, everyone I love would stop to partake in Sunday brunch.

Veggie skewers, spinach & egg pizza, cherry blintz, agua fresca

In my ideal world, I would have the option to go back to my pre-paid campus dining hall whenever I didn’t feel like scrounging in my fridge.

BBQ tofu, salad, green beans, white beans, agua frescaThere would be fewer last-resort sources of protein.

There would be more salads. Period.

Spinach, black beans, avocado, goat cheese & maple balsamic dressing

There would be lots of sprouts, because for some reason, when I eat them I feel like I’m channeling the Buddha. (where did I make that association, I wonder?)

I would know the Chobani company personally, just to make sure they’re treating their dairy cows right. (Because if it wasn’t for greek yogurt, I’d easily be vegan all the time!)

I would make the whole world see that green monster smoothies are absolutely delicious.

(I might have forced this down the throats of several of my teammates one pre-rugby-game morning. No one gagged, that’s a start!)

The morning special: green monster smoothie + coffee with almond milk & cinnamon.

One of my favorite cereals of all time, combined with the more new-age almond milk.

And…my roomie would surprise me with wonderful baked goods every night! (It’s a wonder what an unexpected pie can do for a student on the verge of a breakdown!)

Homemade blueberry pie/island of crust floating in blueberry yum sauce.

And similar to bad criminals, bad weather would go into hiding, think about what it’s done to the hearts and minds of sun-loving girls like me, and only come back out for holiday festivities and the occasional ski trip.

Mountains? Uh…Marco?

Ain’t No Sunshine


I’ve been in a funk lately. Blame it on the weather.

I think spending most of the past 3 years at college in Colorado has made me dependent on sunshine, completely slave to its connotations of optimism and happiness. Regardless of the fact that my fair shoulders are still sporting sunburn lines from 2 months ago, I am itching for the impending (hopefully soon) days where I will require more SPF than the 15 included in my still-too-dark-for-me tinted moisturizer. Month of May, I’m counting on you.

Alas, hurumph. Seeing as the past week has looked like this at school…

Where is the horizon?

A few peeks of sunshine here and there, but no consistent beacons of light from the heavens. Being Easter weekend and all, I was craving warm weather like my Christian upbringing should have taught me to crave the coming of Jesus. Too far? Ok.

Thank God for the arrival of my mom and sister, who nourished me with good food!

Fancy brunch with fruit and waffles. Fruit > Waffles, at least lately.

Shrimp salad! Pescatarianism is nice now and then.

Chocolate covered expresso beans. What? I had a paper to write.

Β The sun did come out sometimes, and those times seemed to call for a beverage with rice milk. Funny how that happens!

Mate latte with rice milk. Mom with her unsweetened iced tea, an obsession that my sweet tooth will perhaps never understand.

Rain?

Until last week, when this precipitation marathon commenced, it had rained all of 3 times that semester, and I had loved that. There’s only so much tea-sipping and novel-reading I can do before I get antsy.

Milk in your coffee?

I usually roll with soy, but I like to switch it up and get other alternatives when they’re offered. I still need to try hemp milk!

No, but really, this afternoon I was shaking. Why, you ask?

Dun-dun-dun-dunnnnnnnn!

A tall latte with soy milk.

Let me explain! I used to get soy lattes at the school coffee shop all the time. They’re so delicious and nutritious (yes? i think so). But since I’m on a commuter meal plan this semester and most of my food I prepare at home, I haven’t been around campus much to indulge in coffee. Nor have I really needed it! That’s a good sign, right?

Well, after a quick elliptical workout this morning, I was really craving a soy latte! I noshed on a ginormous (it’s a real word, go with it) apple while getting ready for school:

Did you know that apples are more effective in waking you up than caffeine? For real, look it up!

And then sipped on my latte before class.

Other than being a little hungrier than usual for lunch, it meshed with me very, very nicely. I didn’t even feel the caffeine; just soymilk + coffee goodness! I attended a lunch held by the political science department where I had ordered (teehee…so spoiled) a huge salad from the nearby (amazing) deli, Wooglin’s.

Then, after my Arabic adjunct had ended around 4 PM, I started…shaking. Regardless of the fact that I had just watched a 2-hour Arabic movie (“State of Love.” it was great!), my heart would not stop racing!

I’m not sure when the last time I had coffee was, but it’s definitely been at least a month, perhaps even 2?? It’s amazing what caffeine withdrawal can do!

One of coping methods is making to-do lists. I might never look at this list again, but hey, A for effort!

Thank goodness I had rugby practice at night to solve THAT problem πŸ™‚

I usually don’t make “cute food” to put on the blog, but since I was using grapes…I just couldn’t resist.

Teehee.

Practice was hard and good. Good and hard, whatever you prefer.

(There were a lot of dirty jokes over dinner, can you tell? πŸ™‚ )

I simply HAD to get school food tonight, because it was SUSHI TUESDAY!

My roll had carrot, cucumber, asparagus, red pepper, and tofu.

Yummm. I still haven’t mastered theΒ eat-each-piece-in-one-bite-to-avoid-looking-like-a-gross-slob technique, but so long as it all winds up in my belly, I’m a happy sushi-eater πŸ™‚

My other rugby teammates compensate by making artwork out of soy sauce.

(Apparently I’m all about the caps tonight. I still blame the caffeine.)

I usually get some variation on the avocado roll (with tofu if they have it), but since I had already had some avocado in my salad today, I opted for more veggies instead. I’m trying to focus on variety!





Gym-nice-stics


Has anyone ever watched Stick It?

It’s produced by the same writer who did Bring It On, which should give you an idea of its quality.

Nevertheless, it’s one of the only gymnastics movies out there, so my sister owns it.

Among its many snarky one-liners, we like to recite the one that goes, “It’s not called gymnicestics!

Nasty as it may be on your body, it’s nice just to gaze in awe of that kind of grace.

That flexibility.

Those thighs.

That fearlessness.

And those little imperfections that remind me my sister is, indeed, human.

That balance is a pretty awesome thing to watch.

But life isn’t a spectator sport, so within a few hours we were onto the next order of business!

I brought my breakfast to the gym:

1/3 cup rolled oats, pomegranate arils, almonds, instant coffee powder

I wish this coffee had worked, but I’m almost certain the box is circa 1990. Anywho, the flavor was perky!

Lunch was had at home:

Rainbow chard, sauteed with chickpeas and spiced with garam masala. Topped with leftover winter squash puree!

And then we went to the mall.

After a few hours, we were all, might I say, cranky.as.fuck.

I turned to a grande pumpkin spice latte with soy milk for salvation:

With a handful of almonds in the car ride back, I was content again and ready to attend the Zumba launch at my gym!

Verdict? I loved it. I like it more than BodyJam classes, because I prefer latin music and hip shaking than jazz with footwork. I’m sad that I’ll only be able to take advantage of it for a few days before I leave for Colorado!

Good thing my friends don’t shun me when I show up to their house a sweaty mess:I just don’t get a Snuggy.

And then my sister bakes molasses muffins.

Degrees of Cute


Cute: Going to Core Yoga class with my mom.

Not So Cute: Post-Yoga sloppy oatmeal breakfast.

1/3 cup rolled oats, 1 cup water, 1 banana, strawberry greek yogurt, cinnamon, vanilla

Also not cute: old coffee. Some things should never be revived.

Cute: Looking like a Twilight cover while posing with my pre-work apple snack.

Not So Cute: The process of eating an apple. Chomp chomp chomp! Not exactly ladylike.

Cute: My dog being oblivious to the Christmas ornament hanging on top of his eye.

Not so cute: My dog sleeping in my bed, head on my pillow and all.

Cute: Using my employee discount to pick out my little cousin’s Christmas gifts. And sounding really savvy when explaining, “There is no 3. The sizes go 2T, 3T, 4T, 4, 5, 6, and 6X. Obvi.”

Not so cute: ….nope, work was pretty darn cute today!

 

Cute: Mixed greens with goat cheese.

Not so cute: Veggie burgers. But tasty, nonetheless.

Cute: 8+ hours of sleep.

Not so cute: Dancing at BodyJam class on less than that. Good thing I’ve got the moves.
