Peace and Pie


Ok, so the U.S. of A just killed a major terrorist leader. Am I the only one who feels a little saddened at the jubilation of our country’s citizens over it?

Maybe it’s because I live in a small-liberal-arts-college bubble.

Ok, that’s most definitely why.

My neighbors at the Air Force Academy are having lots of fun celebrating. Amazing how we’re in the same city, but it feels like worlds away! Their celebrations have been a little tamer than other colleges, at least…


But honestly? I don’t like death. In any, any case. Not even in the name of justice. Call me a peace-loving hippie, but in my ideal world, everyone guilty of a crime would be locked away in a box somewhere,  put through some kind of living-purgatory-type-experience (I’m thinking LOST as a model), and released into existence again when they’re truly sorry for what they did.

Small liberal arts college. I did warn you.

But just because my college is full of liberal tree-huggers doesn’t mean we won’t turn this into an excuse to party on a Monday night. My school is in “8th block,” a.k.a. the last quarter of the semester. I still can’t get the glitter out of my hair from this shindig:

Good news: my red jacket is now flour-free and ready to wear again.

Tonight, however, I need to catch up on sleep, so I will leave you with my food-related hopes and dreams! Ready?

In my ideal world, everyone would realize how delicious the combo of sprouts, avocado, & hummus is, and I’d be able to let animals roam free without fear of humans eating them.

In my ideal world, everyone I love would stop to partake in Sunday brunch.

In my ideal world, I would have the option to go back to my pre-paid campus dining hall whenever I didn’t feel like scrounging in my fridge.

There would be more salads. Period.

There would be lots of sprouts, because for some reason, when I eat them I feel like I’m channeling the Buddha. (where did I make that association, I wonder?)

I would know the Chobani company personally, just to make sure they’re treating their dairy cows right. (Because if it wasn’t for greek yogurt, I’d easily be vegan all the time!)

I would make the whole world see that green monster smoothies are absolutely delicious.

(I might have forced this down the throats of several of my teammates one pre-rugby-game morning. No one gagged, that’s a start!)

One of my favorite cereals of all time, combined with the more new-age almond milk.

And…my roomie would surprise me with wonderful baked goods every night! (It’s a wonder what an unexpected pie can do for a student on the verge of a breakdown!)

And similar to bad criminals, bad weather would go into hiding, think about what it’s done to the hearts and minds of sun-loving girls like me, and only come back out for holiday festivities and the occasional ski trip.

Ready? Break!


My college is officially on spring break. So exciting!

But at the moment, I’m particularly thrilled, because I made dinner for the apartment tonight.

Not only did they love it…

it was vegan!

An eggplant bake, to be exact. I just told them I was making eggplant parmesean.

First-class kitchen organization, obviously!

I started off with this recipe, but ended up making some substitutions.

For one, we were out of marinara sauce. What to do?!

“What’s red, saucy, and in my kitchen already?”

Salsa!

See? Looks the same. And that’s all that counts, right? Hehe.

I also used boxed bread crumbs instead of almond flour, and lemon pepper spice instead of italian seasoning. Worked great!

However, the veggie course took a turn for the worse, due a misjudgment on my part of how oven-safe the pan was…

My bad.

They were salvaged, nonetheless.

I made up for it with another dish of roasted asparagus with goat cheese.

Ok, so the goat cheese detail wasn’t vegan. But the main dish was, and the roommates were shocked when I told them!

One of the guys even made a remark along the lines of, “If we let Erica cook every night, we’d be much healthier, cut down on our animal intake, save the environment….”

damn right you would!

I think it’s safe to say they enjoyed it.

And if I had actually used almonds instead of bread crumbs, it would have been gluten free!

Some good eatin’ was certainly called for, after some questionable food choices during these last days of class. Example?

Boxed mac n cheese at 3 AM.

But today, after sleeping until 11, handing in my final paper before noon, and sweating all my stress out in the gym…

I’ve said it before, and I’ll say it again:

I have so many things in my life to be grateful for.

I love books, but one exceptionally great thing about movies is that you can learn a meaningful lesson from them, super quickly!

The movie we watched today in class was no exception. It was a film about boys living on the street in Morocco, and a group of friends trying to bury their recently-deceased friend.

  • “Life is beautiful!” > “Life is a pile of shit!”
  • Rugby team family > Gang family led by abusive deaf & mute older boy
  • Living in a college apartment > Squatting on a corner of the dock
  • Getting bruised from tackles > Getting killed by a thrown stone
  • Watching your friend break her wrist > Watching your friend get his throat slit
  • Working as a summer camp counselor > Selling random trinkets to drivers stuck in traffic
  • Eating a spectrum of delicious foods > Living off of stolen fish
  • Enjoying life on earth > Fantasizing about life after death I don’t know if I should be sharing this so openly, but y’all are a truly lovely group of readers, so here goes: I don’t think about the afterlife because I love my life on earth too much to want anything more. My afterlife views in a nutshell! Endofstory.

It was especially good to see this earlier in the day, because in my team’s first rugby scrimmage of the season today (!) one of my best friends broke her wrist. Ahh! I didn’t see it up close, but I watched it happen.

The Air Force Academy: such a pretty place to play, until the sun sets behind the mountains.

And God help whoever gets in her way once she’s on the field again. She will be one vicious woman.

These are my legs Wednesday. Tomorrow they'll be much more spotted!

Oh, life.

According to my watch, there 44 minutes left to my favorite day of the week. 

Where did all the time go?

Oh, right. To my college education and the crazy commitment schedule it entails.

Wednesday was so wacky that there were times were I told myself, “You can either be late to this activity or this activity. Which one will have the better consequences?” (I chose being on time for an education department meeting at the price of being late to ballet, and later to skip a meeting for drinks to go to a study session. good decisions!)

But at the end of the day, I’m in a class titled “Life After Death.” So lately, I’ve been able to say “Carpe Diem!” with honest (and useful!) gusto.

That’s my…

“Whatevs, it’s after midnight, I’m still reading this article about the life of the prophet Muhammad, but it’s all good”

…reaction.

At the end of the day, when I can have a deep late-night conversation about religion with one of my bewildered (and slightly intoxicated) roommates and feel completely knowledgeable, I’m satisfied.

(I can assure you that I never inquire about his study of physics when I’m in the same state.)

At the end of the end of that day (which would be a new day!), when I can begin the journey of student-aiding in a local high school before my class for the day even starts, I’m thrilled.

9th grade English students might be a little unpredictable, but the 7 a.m. mountain view is always sure to inspire.

And at the end of the end of the end of the day (lost yet?),

there is always good food to fall back on.

Am I right?

Back to School


It’s amazing how long it’s taken me to even partially recap Vegas. Scandalous clubbing pictures aside, all there’s left to show you is some eats from the journey home!

Though I was kind of still full from my pina colada earlier that day, I bought a cup of tortilla soup from the Wolfgang Puck Express in the airport, mostly because it included goat cheese.

In fact, I was quite disappointed when my gentle command of “You can keep plopping that on!” to the serving lady went unheard. Still, it was delicious!

I applaud Frontier Airlines for the free cookie, too 🙂

I’m not too proud of my dining style during my Vegas “recovery day” at home. Meals were bland like this:

(I thought putting it next to the magazine would make my Daiya cheese & salsa tacos look less sad.)

And meals were random like this:

I wanted Shrimp Lo Mein. Badly.

Other bad choices: frosted flakes, cheese dip, tortilla chips, and way too much coconut ice cream.

But it’s ok, because my roomies came home eventually and made crepes!

Sauteed carrots, bell peppers, & onions + goat cheese. x3. plus another crepe with butter & sugar.

Now, despite our brief mishap with pulling floor tiles out..

We’re pretty much back to normal!

I started today with a green monster smoothie. The perfect way to kick off a detox, I do say!

I actually blended it the night before and stuck it in the fridge overnight. Bad idea! It doesn’t taste the same when it’s not fresh, and I had to add some honey to sweeten it up.

Lunch was a glorious reunion with two standbys: tofu and veggies.

I took a nap in this same sunny spot following lunch!

I had a loooong afternoon at ballet and then in the gym trying out a new routine (Fitnessista’s 2011 WSU!), so I came home in dire need of protein. I looked for the greek yogurt

But I made the mistake of having one of my male roommates pick it out at the store, and he got the “traditional” variety that has not a lot of protein and lots more fat. I don’t know if I’ll get around to eating this, since protein is such a huge part of why I eat greek yogurt!

 

I opted for more tofu and an orange instead.

I packed dinner to eat while doing reading later on! Making to-go meals is kind of fun.

See? Detox. It’s on.

I hope everyone had a good Presidents’ Day! Did y’all get the day off, and if so, how did you spend it?

Still class for me (although I did just get a break, so I can’t complain!); the only sign of the holiday was that my ballet teacher was decked out in American flag pictures and colors 🙂




Resolution


There’s a reason why I didn’t post yesterday.

It’s the same reason that explains why I writing this at 4 AM.

My New Year’s dinner with the family was good:

curried acorn squash puree

and mixed greens with avocado, goat cheese, almonds

When I went out to a friend’s, I ended up staying sober throughout the night, but I did consume a vast quantity of cookies. and chips with salsa con queso.

I contributed these little babies:

Magic Middle Peanut Butter Cookies

At one point a few were splayed across the carpet, along with other food and beverages, but they still got the thumbs up!

I can tell you exactly what I ate the next day:

half a pancake with (fake) syrup. 3 slices of melon. chips. chocolate covered cherries. cookies. oatmeal bars. slice of cheese & broccoli pizza. (a few) carrot sticks. kettle corn.

yup. no wonder i couldn’t sleep last night!

Thankfully, I had roped my mom into another Zumba launch at 10:30 this morning, which we attended and she loved! I’m so glad, because this is a woman who is “embarrassed how long she studied dance” because she “doesn’t have any coordination any more.” Not true, Mom!

Well, it is true that you won’t be able to shake your hips like I can. But let’s put that aside.

We stayed for BodyFlow afterwards, which sold her. She’s hooked.

It’s rainy and yucky outside, so I came home to finish out the sunflower seed butter jar!

1/3 cup rolled oats, 1/2 banana, 1 cup blueberries, cinnamon, sunflower seed butter

I haven’t had Oats in a Jar for so long! I love being able to scrape the remaining bit of nut butter from every inch of the jar. And they make great portable breakfasts when I’m at school.

I can't believe how expensive that jar was...

It feels like the end of something beautiful, and the start of something new. Appropriate, right?

There are so many things I need to do.

But I do have one resolution!

I’m going to dance.

Every day.

Whether it’s 2 hours of ballet or 5 seconds of the dougie, it’s going to happen.
