Peace and Pie

Ok, so the U.S. of A just killed a major terrorist leader. Am I the only one who feels a little saddened at the jubilation of our country’s citizens over it?

Maybe it’s because I live in a small-liberal-arts-college bubble.

Ok, that’s most definitely why.

My neighbors at the Air Force Academy are having lots of fun celebrating. Amazing how we’re in the same city, but it feels like worlds away! Their celebrations have been a little tamer than other colleges, at least…

But honestly? I don’t like death. In any, any case. Not even in the name of justice. Call me a peace-loving hippie, but in my ideal world, everyone guilty of a crime would be locked away in a box somewhere,  put through some kind of living-purgatory-type-experience (I’m thinking LOST as a model), and released into existence again when they’re truly sorry for what they did.

Small liberal arts college. I did warn you.

But just because my college is full of liberal tree-huggers doesn’t mean we won’t turn this into an excuse to party on a Monday night. My school is in “8th block,” a.k.a. the last quarter of the semester. I still can’t get the glitter out of my hair from this shindig:

Good news: my red jacket is now flour-free and ready to wear again.

Tonight, however, I need to catch up on sleep, so I will leave you with my food-related hopes and dreams! Ready?

In my ideal world, everyone would realize how delicious the combo of sprouts, avocado, & hummus is, and I’d be able to let animals roam free without fear of humans eating them.

Whole-wheat tortilla with hummus, sprouts, spinach, & avocado, + carrots

In my ideal world, everyone I love would stop to partake in Sunday brunch.

Veggie skewers, spinach & egg pizza, cherry blintz, agua fresca

In my ideal world, I would have the option to go back to my pre-paid campus dining hall whenever I didn’t feel like scrounging in my fridge.

BBQ tofu, salad, green beans, white beans, agua frescaThere would be fewer last-resort sources of protein.

Tuna, broccoli, green peppers & onions

There would be more salads. Period.

Spinach, black beans, avocado, goat cheese & maple balsamic dressing

There would be lots of sprouts, because for some reason, when I eat them I feel like I’m channeling the Buddha. (where did I make that association, I wonder?)

Sprouts, carrots, broccoli & hummus

I would know the Chobani company personally, just to make sure they’re treating their dairy cows right. (Because if it wasn’t for greek yogurt, I’d easily be vegan all the time!)

Plain greek yogurt with cinnamon and....apples? Somewhere?

Plain greek yogurt with chia seeds, 1/2 a mango, & 1 clementine

I would make the whole world see that green monster smoothies are absolutely delicious.

(I might have forced this down the throats of several of my teammates one pre-rugby-game morning. No one gagged, that’s a start!)

The morning special: green monster smoothie + coffee with almond milk & cinnamon.

One of my favorite cereals of all time, combined with the more new-age almond milk.

And…my roomie would surprise me with wonderful baked goods every night! (It’s a wonder what an unexpected pie can do for a student on the verge of a breakdown!)

Homemade blueberry pie/island of crust floating in blueberry yum sauce.

And similar to bad criminals, bad weather would go into hiding, think about what it’s done to the hearts and minds of sun-loving girls like me, and only come back out for holiday festivities and the occasional ski trip.

Mountains? Uh…Marco?

More of this, please.

Little sister not necessary. Just the sunshine, please!

Thoughts on politics?

Favorite trees to hug?

Sharing is caring!

I didn’t come up with anything creative to say today. I felt like a frustrated, angsty teenager.

Back to School

It’s amazing how long it’s taken me to even partially recap Vegas. Scandalous clubbing pictures aside, all there’s left to show you is some eats from the journey home!

Though I was kind of still full from my pina colada earlier that day, I bought a cup of tortilla soup from the Wolfgang Puck Express in the airport, mostly because it included goat cheese.

In fact, I was quite disappointed when my gentle command of “You can keep plopping that on!” to the serving lady went unheard. Still, it was delicious!

I applaud Frontier Airlines for the free cookie, too 🙂

I’m not too proud of my dining style during my Vegas “recovery day” at home. Meals were bland like this:

(I thought putting it next to the magazine would make my Daiya cheese & salsa tacos look less sad.)

And meals were random like this:

I wanted Shrimp Lo Mein. Badly.

Other bad choices: frosted flakes, cheese dip, tortilla chips, and way too much coconut ice cream.

But it’s ok, because my roomies came home eventually and made crepes!

Sauteed carrots, bell peppers, & onions + goat cheese. x3. plus another crepe with butter & sugar.

Now, despite our brief mishap with pulling floor tiles out..

We’re pretty much back to normal!

I started today with a green monster smoothie. The perfect way to kick off a detox, I do say!

spinach, 1/2 banana, 1 scoop vanilla protein powder, almond milk, cinnamon

I actually blended it the night before and stuck it in the fridge overnight. Bad idea! It doesn’t taste the same when it’s not fresh, and I had to add some honey to sweeten it up.

Lunch was a glorious reunion with two standbys: tofu and veggies.

Coconut tofu, mushrooms, water chesnuts, & spinach, sauteed in coconut oil & balsamic vinegar

I took a nap in this same sunny spot following lunch!

I had a loooong afternoon at ballet and then in the gym trying out a new routine (Fitnessista’s 2011 WSU!), so I came home in dire need of protein. I looked for the greek yogurt

But I made the mistake of having one of my male roommates pick it out at the store, and he got the “traditional” variety that has not a lot of protein and lots more fat. I don’t know if I’ll get around to eating this, since protein is such a huge part of why I eat greek yogurt!

I opted for more tofu and an orange instead.

I packed dinner to eat while doing reading later on! Making to-go meals is kind of fun.

Sauteed carrots, snap peas, mushrooms, & goat cheese with olive oil & balsamic vinegar

See? Detox. It’s on.

I leave you with photos of another rugby 21st birthday party!

(February is full of them, and I’m not complaining!)

The birthday girl making good choices.

More maturity.

Cake.

Shots. (the resulting face)

^And me, somewhere in the center of it all 🙂

I hope everyone had a good Presidents’ Day! Did y’all get the day off, and if so, how did you spend it?

Still class for me (although I did just get a break, so I can’t complain!); the only sign of the holiday was that my ballet teacher was decked out in American flag pictures and colors 🙂

The Whole Day

Since my trip to Zumba last night required into a farther section of the city, I figured I might be near a Whole Foods once I got out.

I was right. 8 Minutes Away! Too close to resist.

I limited myself to 3 items (which I convinced myself I couldn’t get anywhere else): protein powder, daiya cheese, and a huge jar of crunchy organic peanut butter. All were very necessary: my protein powder just ran out, I’ve been wanting to try Daiya’s vegan cheese forever, and all of my roommates burn through crunchy peanut butter. I don’t know why they don’t sell the organic (or at least natural) crunchy peanut butter in big jars at our local supermarket, but I found it at Whole Foods! All is well now.

And there was great rejoicing! Vanilla green monsters are just as tasty 🙂

With spirulina, to boot! I’ve been meaning to get this alga (which is apparently the singular form of algae? Oho) into my life. It’s convenient to have it right in my protein powder!

Although it annoys me that there was such a gap from the top to the contents…

It that typical?

Spinach, 1/4 avocado, 1 small banana, 1 scoop vanilla protein powder, coconut milk, cinnamon

Usually I’m too late rushed to eat my breakfast at home, but I slept in today so I had some time! I tried to eat around 9 so I’d actually have an appetite for the Religion Department Lunch 3 hours later.

Do y’all have Jimmy Johns subs where you are? I’m not a sub person, but these are pretty good. I just wish they had more bread choices! I had 1/2 a veggie sub, which contains sprouts (the best part!), tomatoes, cucumbers, lettuce, & provolone cheese.

I was productive for a while this afternoon, then took a break for a quick treadmill run. I think my school’s “girl” gym is overheated; I get cold really easily, but as soon as I move in there I’m drenched in sweat immediately! I did a modified run since I had rugby practice tonight; it was about 40 minutes total.

5 minutes jog (warm up), 6.0 mph

4 minutes walk @ 7.5% incline, 4.0 mph

5 minutes jog @ 1.0% incline, 6.5 mph

Repeat those two 2x

5 minutes walk (cool down), 3.8 mph

I came home to refuel with some protein & carbs!

The very last of the plain greek yogurt, 1 chopped green apple, 2 small chunks peanut butter, cinnamon

I tried to do reading, but was distracted my the usual roommates’ nap interference plans and charming conversation.

I threatened to send these into a male modeling agency. They weren’t into it.Another roommate found the Daiya cheese and graciously decided to test it out!

“Melts and stretches? I’m intrigued.”

What’s the verdict, Lo?

“That works. I could so be a vegan.” 🙂

A few hours (and prunes! I’m so glad y’all like them too!!) later, I prepared to venture out into the single-digit temperatures for a quick rugby practice.

Despite the fact that the only form of lip balm I could find was “merlot lip shimmer,” I came to practice prepared!

For post-practice dinner, more of the spaghetti squash that never ends. I think there’s only one serving left, finally!

Spaghetti squash over spinach with chickpeas, red pepper, onion, and daiya vegan cheese

I see what all the fuss is about with this Daiya stuff! It’s not exactly the same as cheese, but it’s very similar in texture and the taste is phenomenal.

Tomorrow’s Friday! Are y’all excited or what? Any fun plans?

Question: Do you like green apples? I always find them too tart, but when you need an apple, you need an apple.

Flats on Ice

Hello hello everybody!

Wonderful Wednesdays all around?? Glad to hear it! Haha. I feel like Wednesday is the neutral day of the week. Yes, it’s technically in the middle, but I think Thursday is the breaking point and Wednesday’s the “Well, whatever” day. Thoughts?

I raised myself out of bed for rugby weights this morning; I’m finally back on track, and my weights (the ones I lift) are increasing as well! That’s awesome to feel. I was SO. HUNGRY. by the time I got home and showered, though! My appetite was vicious. I chose protein.

Plain greek yogurt, banana, coconut, cinnamon, & peanut butter…to-go for class!

Colorado is sunny but frigid…

And yet, I chose to wear flats. It seems like I nearly slip in whatever kind of shoes I’m wearing, so why fight the feeling? I wanna wear my ballet flats!!

Lunch was a clean-out-the-fridge day! I have SO much spaghetti squash left  over.

Spaghetti squash over mixed greens with tempeh & nutritional yeast

(I’m actually glad the tempeh’s gone; my roomie bought the “spicy” kind and it was too intense for me!)

And guess what dinner was? Don’t hate me…

Yup, the same! Hey, it really needs to be eaten up. At least it was in a different color bowl! This time, no tempeh, but canned tomatoes (ew?) and more nooch.

Prunes too! Do y’all like prunes? Not the nasty, stewed kind; I tried those this summer and I can see why many are scarred against this delicious fruit. Just buy them like raisins!

A black abyss of yummyness.

I have a confession. I’ve missed Zumba (any dance class, really) so much that I creeped online to look up classes in the area.

A 15 minute drive and I found myself here:

Yes, as a recently-turned-21-year-old, I wound up in a hokey bar to take a Zumba class. Dork alert!

The class was pretty easy, and there weren’t enough latin tunes as I would have liked, but I still really enjoyed it! Some booty-shakin’ was just what I needed. I definitely want to be a Zumba instructor one day! I nearly sprained an ankle slipping on ice (in sneakers, mind you) on my way out, but it was worth it 🙂

I’ve almost finished my reading for tonight (the early rabbis! wooo!), but I’m being distracted by my teenage sister’s college woes and my at-home boy-toy’s promises to visit me over spring break. There are worse fates!

Almost to Thursday! My favorite day of the week.

Question: Have you ever slipped on ice and totally wiped out? Did anyone see? I’ve gotten to the point where I don’t consider anything I do embarrassing, which is handy when my clumsiness gets the best of me!

Warm Up

Yesterday: -5 degrees

Today: -1 degrees

Tomorrow: 15 degrees. Woooooah!

Obviously, the process of getting to and from class without freezing solid, let alone doing my work, has delayed my actions in the blogworld lately! I’ve been disciplining myself with 7 am rugby weights in the gym and hours of reading on life after death, but the blog post consistency has suffered. No worries, I’m back! Here’s a glimpse into what the past few days have entailed.

Breakfasts:

YIAJ: Yogurt in jar! Of peanut butter, that is. Plain greek yogurt with banana, cinnamon and peanut butter.

The same!

Green monster smoothie with spinach, avocado, chocolate protein powder, greek yogurt, coconut milk, & cinnamon.

Plain greek yogurt, 2 clementines, cinnamon, & granola

Green monster smoothie with spinach, avocado, chocolate protein powder & coconut milk

Fashion break!

(that’s the “bring it, impending cold front” face)

Cristin, I’ve rocked the peacock earrings twice this week!

sweaters + sweater dresses = winter survival

Lunches:

(caution: they’re all the same dang thing! gotta use up the produce)

Variations on a theme: spinach with red bell pepper, with nutritional yeast and tempeh. It’s too easy NOT to make everyday.

Apartment shenanigans break!Bro love on the broken futon.

Those are my scarves.Oh…and that’s a large knife…

Dinners:

Malibu Veggie pizza from Old Chicago (mmm!)

Grilled cheeses (on whole wheat bread) and tomato soup

Homemade bread with flaxseed

School-made garden salad with organic caesar dressing

So as you see, life in the cold could be worse. We’ve even got sunshine!

But still lots of snow.

That’s Colorado for ya!

I’m dreaming of another green monster for tomorrow:

And yet another smile over the fact that I’ve been eating Greek Gods greek yogurt and studying greek gods and the afterlife at the same time!

Night!

Question: Have you been affected by a crazy weather front lately? My family’s been going crazy on the East Coast, but we just got hit out west too! I can’t wait for the return of the 50s on Friday!
