Napping & Other Bandits of Time.


What up bloggies! Sorry I’ve been so m.i.a. this week. I have some excuses prepared! The truth is, it’s not that I’m (purposely) neglecting the blog world. It’s just that I’m a busy, busy college student with a grueling schedule. For elaboration on my school’s weirdo philosophy, see here. I have definitely stretched myself thin this semester. Oy! So in my free time, this what I can be found doing:

  • Napping, napping, napping! I can’t seem to get to bed until after midnight nowadays, and since I teach at a high school in the early mornings (which requires getting up at 6:45), I seem to be always in need of more sleep. This is especially essential before rugby practices.

    The essentials for the walk: scarf, iPod, greek yogurt.

  • Smiling over random happenings in my day, like getting a text from my roommate Dicky saying, “Erica thank you so much. Your salad is soooo good” (I didn’t take a picture, but I layered spinach, roasted brussels sprouts, black beans, corn/peas/carrots, & avocado. He was skeptical, but ended up loving it.) In return, this Taiwanese boy taught me the proper technique for making pancakes, which I was totally unaware of (you have to wait for the bubbles to stop bubbling? really? It’s a testament to the instant-gratification culture of the USA, really, that me, this American girl who should be able to make pancakes like it’s her job, had been too impatient to wait for them to fully cook before flipping.)
  • Spinach with roasted brussels sprouts and nutritional yeast.

    •  Attempting to fit “legit” cooking into my life. I can’t remember the last time I actually planned out a dinner! Usually I’ll just sautee lots of veggies, add some protein, nutritional yeast or goat cheese, and put it on a huge pile of spinach. Or I just use my dining dollars and eat the yummy (most of the time) food my school has to offer.
  • Reveling in life’s funny coincidences. I discovered that a male acquaintance of mine will be living in the house next to me next school year! I can’t remember if this before or after we made out. Regardless, I’m thrilled about it.
  • Socializing with the guests that appear in my 6-person apartment. It does wonders for expanding my circle of friends! (see above. hehe!)
  • Rachel just wrote an article on the best music for getting it on. Coincidentally, much of that music is what we play in our apartment on a regular basis.

  • Im so glad my college doesnt have high standards for showering, or my post-rugby stench might be considered rude.

  • Chatting with far-away friends about our crazy iives, and how we survive them. Sample quote from me: “I can’t believe he abandoned you during your first rave on ectasy! He should have stayed in a jail a little bit longer.”
  • Miss you! Dont do anything stupid.

  • Playing rugby, loving my ruggers, and simultaneously being reminded of just how dangerous the sport is. Our team has just been rocked by the recent death of the University of Texas Women’s Rugby captain. It’s a shocking wake-up call for college rugby, and especially for our team since some of our players were playing when that injury occurred.
  • Looks epic, but that is me making a not-so-low (aka not-so-safe) tackle two years ago, when I was a rookie rugger!

Then again, the danger is what makes the rugby bond so strong.

Luckily, all I usually get are bruises.

  •  Listening to the Smokey Robinson channel on Pandora Radio. It’ll turn your frown upside-down and heal your soul.
  • Oh, and eating! Yes. How could i forget?

We got a thunderstorm the other night, and it was so refreshing because it NEVER rains in Colorado!

What’s the best thing you’ve eaten lately?

My college’s dining hall has started serving gluten-free pancakes at its midnight breakfasts, so even the gluten-free drunk kids can get their drunchies on! They’re actually quite tasty, and I enjoyed some last night. Clarification: Not drunk. 🙂


Feeling Foggy


Have you ever had days where your mind feels more than a smidgen awry, and you think, “Who the hell am I?”

Of course, I could be feeling foggy for many reasons. Shall I count the ways?

  • My head’s a little shaken from my rugby game this afternoon. We were missing a couple of key players, so it was rough and everyone got considerably banged up.
  • I was drunk on Friday night. Not that unusual for a college student, but I don’t drink often, and I didn’t plan for it while eating dinner (read: did not eat bread to soak up the alcohol!) so 2 shots and I was done for.
  • I pulled an all-nighter to write a paper on Thursday night. In my defense, I had dance rehearsals & performances every night that week, and I didn’t start the paper until 1 a.m. Ok, that’s a pitiful defense.
  • I’ve been listening to Ree Drummond’s The Pioneer Woman on my iPod. Ergo, my head is spinning with dreams of my own real-life romance with a cowboy.
  • My mom and my sister are coming to visit in a week, so I need to finish my final paper for class before they arrive. Good thing analyzing Ramakrishna’s mystio-erotic spirtuality through the lens of Hindu masculinity will be an exciting paper to write!

Who the hell am I?

School-produced vegetarian goodness! That blue dot conveys how local the ingredients are; I think the blue is the closest?

The dinner that was not sufficient to withstand alcohol a couple hours later. Being a lightweight is both a gift and a curse!

And yes, it was really sunny that day! Hence the summery, east-coast-y dress. Topped with a J.Crew sweater, no less. You can take the girl outta Connecticut...

Despite the fog, here’s what’s making me happy at the moment:

My roomate did not pick up ORGANIC spinach like I asked, but for the first time I'm having Popeye-mascot-branded spinach!! How cute!

On that note, the apartment fridge is STOCKED. Can you spot the questionable purchases?

Not only did I roast brussels sprouts today, but I prepped my smoothie for tomorrow morning!

I enjoy creeping on my roommates playing frisbee. The mountain background is irresistably epic!

And last but not least…

I can't wait to keep listening to this on my way to school tomorrow! Yum.

Free-soloing.


Maybe it’s because Colorado is experiencing some freakish weather right now.

Maybe it’s because I’m ashamed that I haven’t learned to rock climb yet.

Maybe it’s because I climbed the mountain in this video too long ago (not even 2 years!) and that was without being on the constant verge of a 1000 ft vertical drop.

For whatever reason, I’m obsessed with this gem of a clip about a female rock climber named Steph Davis. I think I’ve played it at least 10 times now:


Watch it. You’ll get dizzy, but it’ll be great. Trust me.

The Youtube channel it’s on is chock full of amazing feats of outdoor adventurers. I think it was just what I needed for a little kick in the butt to start the week!

On this manic Monday, I started with the (really) lazy girl’s version of overnight oats: about-an-hour oats 🙂

1/3 cup oats, 1/3 cup vanilla yogurt, 1/3 cup soy milk, cinnamon, apples

Meaning that I mixed these together, walked to my hour of student teaching at the high school, and then devoured them on the way back to campus. Not too shabby!

But as I arrived on campus, my mind (body? same thing) realized how early I had gotten up, and wanted caffeine.

I’ll say one thing: coffee is a powerful, powerful force.

Looks gigantic, but it just fits a "tall" size.

I stayed awake through class, but my heart would.not.stop.thumping afterwards. Can’t complain, though; I wasn’t really hungry, so I got ahead on some of the night’s reading and ended up munching a red bell pepper for lunch:

Strangely enough, it was enough!

Know what else is a powerful thing? Planning ahead. I knew I’d be starving after ballet and gym, so I pressed and marinated a block of tofu in balsamic vinegar & garlic powder before I left, popped the pieces in a 375 degree oven when I got home at 5:15, and took them out in time for 6:00 dance rehearsal in the form of a beautiful, fulfilling salad.

Complete with nutritional yeast, sauteed onions, and spinach.

Mmmm, portable goodness.

Now my reading’s all done, and it’s not even 9 pm yet. I could get used to this 😉

It’s no free-soloing the Diamond face of Longs Peak, but it’s been a day of achievement.

My college is officially on spring break. So exciting!

But at the moment, I’m particularly thrilled, because I made dinner for the apartment tonight.

Not only did they love it…

it was vegan!

An eggplant bake, to be exact. I just told them I was making eggplant parmesean.

First-class kitchen organization, obviously!

I started off with this recipe, but ended up making some substitutions.

For one, we were out of marinara sauce. What to do?!

“What’s red, saucy, and in my kitchen already?”

Salsa!

See? Looks the same. And that’s all that counts, right? Hehe.

I also used boxed bread crumbs instead of almond flour, and lemon pepper spice instead of italian seasoning. Worked great!

However, the veggie course took a turn for the worse, due a misjudgment on my part of how oven-safe the pan was…

My bad.

They were salvaged, nonetheless.

I made up for it with another dish of roasted asparagus with goat cheese.

Ok, so the goat cheese detail wasn’t vegan. But the main dish was, and the roommates were shocked when I told them!

One of the guys even made a remark along the lines of, “If we let Erica cook every night, we’d be much healthier, cut down on our animal intake, save the environment….”

damn right you would!

I think it’s safe to say they enjoyed it.

And if I had actually used almonds instead of bread crumbs, it would have been gluten free!

Some good eatin’ was certainly called for, after some questionable food choices during these last days of class. Example?

Boxed mac n cheese at 3 AM.

But today, after sleeping until 11, handing in my final paper before noon, and sweating all my stress out in the gym…

What was the highlight of your Wednesday?

I was able to identify Meatloaf’s  “Paradise by the Dashboard Light” at Trivia Night! The song is great…as long as you don’t picture Meatloaf himself doing what he’s singing about. Hehe 😉

I’ve said it before, and I’ll say it again:

I have so many things in my life to be grateful for.

I love books, but one exceptionally great thing about movies is that you can learn a meaningful lesson from them, super quickly!

The movie we watched today in class was no exception. It was a film about boys living on the street in Morocco, and a group of friends trying to bury their recently-deceased friend.

  • “Life is beautiful!” > “Life is a pile of shit!”
  • Rugby team family > Gang family led by abusive deaf & mute older boy
  • Living in a college apartment > Squatting on a corner of the dock
  • Getting bruised from tackles > Getting killed by a thrown stone
  • Watching your friend break her wrist > Watching your friend get his throat slit
  • Working as a summer camp counselor > Selling random trinkets to drivers stuck in traffic
  • Eating a spectrum of delicious foods > Living off of stolen fish
  • Enjoying life on earth > Fantasizing about life after death I don’t know if I should be sharing this so openly, but y’all are a truly lovely group of readers, so here goes: I don’t think about the afterlife because I love my life on earth too much to want anything more. My afterlife views in a nutshell! Endofstory.

It was especially good to see this earlier in the day, because in my team’s first rugby scrimmage of the season today (!) one of my best friends broke her wrist. Ahh! I didn’t see it up close, but I watched it happen.

The Air Force Academy: such a pretty place to play, until the sun sets behind the mountains.

And God help whoever gets in her way once she’s on the field again. She will be one vicious woman.

These are my legs Wednesday. Tomorrow they'll be much more spotted!

Oh, life.

No fear! There’s still food. Can’t you appreciate it a little more now? 😉

Flats on Ice


Hello hello everybody!

Wonderful Wednesdays all around?? Glad to hear it! Haha. I feel like Wednesday is the neutral day of the week. Yes, it’s technically in the middle, but I think Thursday is the breaking point and Wednesday’s the “Well, whatever” day. Thoughts?

I raised myself out of bed for rugby weights this morning; I’m finally back on track, and my weights (the ones I lift) are increasing as well! That’s awesome to feel. I was SO. HUNGRY. by the time I got home and showered, though! My appetite was vicious. I chose protein.

Plain greek yogurt, banana, coconut, cinnamon, & peanut butter…to-go for class!

Colorado is sunny but frigid…


 

And yet, I chose to wear flats. It seems like I nearly slip in whatever kind of shoes I’m wearing, so why fight the feeling? I wanna wear my ballet flats!!

Lunch was a clean-out-the-fridge day! I have SO much spaghetti squash left  over.

And guess what dinner was? Don’t hate me…

Yup, the same! Hey, it really needs to be eaten up. At least it was in a different color bowl! This time, no tempeh, but canned tomatoes (ew?) and more nooch.

Prunes too! Do y’all like prunes? Not the nasty, stewed kind; I tried those this summer and I can see why many are scarred against this delicious fruit. Just buy them like raisins!

A black abyss of yummyness.

I have a confession. I’ve missed Zumba (any dance class, really) so much that I creeped online to look up classes in the area.

A 15 minute drive and I found myself here:

Yes, as a recently-turned-21-year-old, I wound up in a hokey bar to take a Zumba class. Dork alert!

The class was pretty easy, and there weren’t enough latin tunes as I would have liked, but I still really enjoyed it! Some booty-shakin’ was just what I needed. I definitely want to be a Zumba instructor one day! I nearly sprained an ankle slipping on ice (in sneakers, mind you) on my way out, but it was worth it 🙂

I’ve almost finished my reading for tonight (the early rabbis! wooo!), but I’m being distracted by my teenage sister’s college woes and my at-home boy-toy’s promises to visit me over spring break. There are worse fates!

Almost to Thursday! My favorite day of the week.

Question: Have you ever slipped on ice and totally wiped out? Did anyone see? I’ve gotten to the point where I don’t consider anything I do embarrassing, which is handy when my clumsiness gets the best of me!
