Ain’t No Sunshine

I’ve been in a funk lately. Blame it on the weather.

I think spending most of the past 3 years at college in Colorado has made me dependent on sunshine, completely slave to its connotations of optimism and happiness. Regardless of the fact that my fair shoulders are still sporting sunburn lines from 2 months ago, I am itching for the impending (hopefully soon) days where I will require more SPF than the 15 included in my still-too-dark-for-me tinted moisturizer. Month of May, I’m counting on you.

Alas, hurumph. Seeing as the past week has looked like this at school…

Mountains? Hello? Are you there?

And this at my grandparent’s cabin, where I stayed for Easter:

Where is the horizon?

A few peeks of sunshine here and there, but no consistent beacons of light from the heavens. Being Easter weekend and all, I was craving warm weather like my Christian upbringing should have taught me to crave the coming of Jesus. Too far? Ok.

Thank God for the arrival of my mom and sister, who nourished me with good food!

Fancy brunch with fruit and waffles. Fruit > Waffles, at least lately.

Cafe au lait (with rice milk and a laughing sister)

Shrimp salad! Pescatarianism is nice now and then.

Chocolate covered expresso beans. What? I had a paper to write.

Sister cleavage and other in-your-face-sexy things at happy hour.

Pear-drenched Brie

Spinach-Artichoke Dip.

Mussels. You know what they say, when dining on a parent's tab...

Butternut squash burger. Surprisingly not my fave!

More shrimp. There's tilapia in there too, but I think I just have to accept that it is not the fish for me.

Oats with strawberries, cinnamon, and chia seeds!

Spinach salad, sweet potato, and some crazy blend of Mexican leftovers. Mmm.

Peach-pear-apricot smoothie from a coffee shop. I think I simply prefer green monsters!

Awesome salad for Easter brunch at a vegetarian restaurant in Denver!

Lil sis and Mom also lovin' vegetarian Easter. Who needs ham?

(The x’s on her hands add to her naive charm, no?)

Topped off with vegan carrot cake. The best carrot cake I've ever had in my life, in fact.

Obligatory Easter candy, with a random and wonderful inclusion of Burt's Bee's lotion. Thanks Aunt Julie!

ย The sun did come out sometimes, and those times seemed to call for a beverage with rice milk. Funny how that happens!

Mate latte with rice milk. Mom with her unsweetened iced tea, an obsession that my sweet tooth will perhaps never understand.

Iced cafe au lait with rice milk, which the barista oddly termed a "Rolait."

What are your thoughts on…

Rain?

Until last week, when this precipitation marathon commenced, it had rained all of 3 times that semester, and I had loved that. There’s only so much tea-sipping and novel-reading I can do before I get antsy.

Milk in your coffee?

I usually roll with soy, but I like to switch it up and get other alternatives when they’re offered. I still need to try hemp milk!

Napping & Other Bandits of Time.

What up bloggies! Sorry I’ve been so m.i.a. this week. I have some excuses prepared! The truth is, it’s not that I’m (purposely) neglecting the blog world. It’s just that I’m a busy, busy college student with a grueling schedule. For elaboration on my school’s weirdo philosophy, see here. I have definitely stretched myself thin this semester. Oy! So in my free time, this what I can be found doing:

  • Napping, napping, napping! I can’t seem to get to bed until after midnight nowadays, and since I teach at a high school in the early mornings (which requires getting up at 6:45), I seem to be always in need of more sleep. This is especially essential before rugby practices.

The essentials for the walk: scarf, iPod, greek yogurt.

  • Smiling over random happenings in my day, like getting a text from my roommate Dicky saying, “Erica thank you so much. Your salad is soooo good” (I didn’t take a picture, but I layered spinach, roasted brussels sprouts, black beans, corn/peas/carrots, & avocado. He was skeptical, but ended up loving it.) In return, this Taiwanese boy taught me the proper technique for making pancakes, which I was totally unaware of (you have to wait for the bubbles to stop bubbling? really? It’s a testament to the instant-gratification culture of the USA, really, that me, this American girl who should be able to make pancakes like it’s her job, had been too impatient to wait for them to fully cook before flipping.)
  • Spinach with roasted brussels sprouts and nutritional yeast.

    • ย Attempting to fit “legit” cooking into my life. I can’t remember the last time I actually planned out a dinner! Usually I’ll just sautee lots of veggies, add some protein, nutritional yeast or goat cheese, and put it on a huge pile of spinach. Or I just use my dining dollars and eat the yummy (most of the time) food my school has to offer.
  • Reveling in life’s funny coincidences. I discovered that a male acquaintance of mine will be living in the house next to me next school year! I can’t remember if this before or after we made out. Regardless, I’m thrilled about it.
  • Socializing with the guests that appear in my 6-person apartment. It does wonders for expanding my circle of friends! (see above. hehe!)
  • Rachel just wrote an article on the best music for getting it on. Coincidentally, much of that music is what we play in our apartment on a regular basis.

  • Im so glad my college doesnt have high standards for showering, or my post-rugby stench might be considered rude.

  • Chatting with far-away friends about our crazy iives, and how we survive them. Sample quote from me: “I can’t believe he abandoned you during your first rave on ectasy! He should have stayed in a jail a little bit longer.”
  • Miss you! Dont do anything stupid.

  • Playing rugby, loving my ruggers, and simultaneously being reminded of just how dangerous the sport is. Our team has just been rocked by the recent death of the University of Texas Women’s Rugby captain. It’s a shocking wake-up call for college rugby, and especially for our team since some of our players were playing when that injury occurred.
  • Looks epic, but that is me making a not-so-low (aka not-so-safe) tackle two years ago, when I was a rookie rugger!

Then again, the danger is what makes the rugby bond so strong.

Luckily, all I usually get are bruises.

  • ย Listening to the Smokey Robinson channel on Pandora Radio. It’ll turn your frown upside-down and heal your soul.
  • Oh, and eating! Yes. How could i forget?

Salad with mixed greens, roasted brussels sprouts, black beans, & nutritional yeast.

Brown-speckled banana, just the way I like them.

Vegan sampler of salad & lentils!

Breaking the vegan streak with yogurt.

Did I devour that already? Oops. It was yummy.

A Mocha Blast from the school coffee shop. Note the cute eco-friendly cups! Theyre compostable.

You knew it was only a matter of time! Green monster smoothie with spinach, orange, vanilla protein powder, cinnamon, & coconut on top!

More salad. How lovely these brussels sprouts look!

Plain greek yogurt with cinnamon & a pear.

Yellow cake ice cream. Nom nom!!

Well that’s all I’ve got for now.My weekend is sure to be full of paper-writing, partying, & rugby playing; I’m hoping for sunshine to accompany them all!

Questions:

Do you like the rain?

We got a thunderstorm the other night, and it was so refreshing because it NEVER rains in Colorado!

What’s the best thing you’ve eaten lately?

My college’s dining hall has started serving gluten-free pancakes at its midnight breakfasts, so even the gluten-free drunk kids can get their drunchies on! They’re actually quite tasty, and I enjoyed some last night. Clarification: Not drunk. ๐Ÿ™‚

(Random) Food & Facts

Answer me a question, would ya?

Have a wonderful day!

If I can make it there, I can make it anywhere

That title is referring to vegetarian dining in Oklahoma.

With carnivorous rugby players ๐Ÿ™‚

Even though our coach excitedly informed me that there was “one of my kind” on the men’s team, I had already acknowledged that the meal dining-out situation could get hairy. But I am proud to say…I am one skilled menu-reader/order-changer/waiter-questioner. I survived!

The 11 hour car ride from Colorado to Oklahoma was nutritious enough:

Whole wheat bread w/ peanut butter, frozen strawberries

And then we stopped by a Waffle House by our hotel for dinner.

I know.

Usually I looooove an excuse to have breakfast for dinner, but I’ve had Waffle House waffles once before, and I feel sorry for truckers that think they’re the best. Not to be sassy…but there is a bigger, better world of waffles out there.

So what did I do?

May I introduce the “large dinner salad?” Better than nothing.

And two eggs over easy, for protein.

If I can make it there, I can make it anywhere. Yes?

Things went up from there! The next dinner at Saltgrass Steakhouse, I scoured the menu and ordered,

“the side spinach salad, the seasonal veggies, and a baked sweet potato, please.”

I made sure to be extra nice to the waitress, which wasn’t too hard when you’re dining with male rugby players ๐Ÿ™‚ No pictures, though, because they don’t know me that well yet and didn’t want to freak them out.

And I had half of the sweet potato for breakfast the next day, with a smear of peanut butter on top! Yummy.

(I just wrote “swear” instead of “smear”. Merely typing “rugby” affects me like that…)

I also got a soy latte or two while getting my coach’s (mandatory) coffees in the morning.

(Her order is a Venti Toffee Nut Latte with Half & Half. I am glad to be a girl who enjoys the simpler things in life!)

Since we girl ruggers didn’t have games to play, our nights were spent terrorizing Norman, Oklahoma, including its late night munchie scene. My belly was often still full from the night before once the morning came, so I basically became a fruititarian (?) by day…

Along with these amazing gummy calcium supplements we shared ๐Ÿ™‚ Too cute to pass up!

But the moment of truth was the dinner at…

“Ron’s Burger & Chili Joint.”

Oh dear oh dear. Was I up to it??

Mission accomplished!

Dinner salad (I picked off the horrendous amount of unmentioned bacon & cheese and requested extra black beans) and a grilled cheese, which I didn’t finish because it wasn’t too great. I did polish off some root beer floats, too!

Next time in Oklahoma (let’s hope that never happens), I wanna see what THIS is all about:

Yes, steakhouse sushi. Apparently it’s quite popular, and pricey!

Maybe my teammates and I can steal another pitcher of beer from a downtown bar.

(We never drank it, but kept it as a trophy in the fridge)

Oh, and I’m so done with burger joints.

(That’s fried zucchini and a german chocolate chiller. I’ve had better!)

Thankfully, there are worse ways to spend your spring break than being team moms for the men’s rugby team.

And there are worse ways to spend rainy days than watching the beautiful sport of rugby.

If I can make it in Oklahoma, I can make it anywhere.

But for now, I’m happy to be back in the state of Colorado, where flannel is acceptable evening wear, recycling is your code of living, and vegetarianism is far from a foreign word.

What’s the wackiest state you’ve ever been to? And what’s the weirdest thing you did there?

My Oklahoma highlight was dressing up the only not-21 girl with us to resemble a guy from the men’s team so she could use his ID. It worked, and we went to a strip club. What up, Oklahoma!

What I Ate Wednesday!

It’s about time I jumped on this bandwagon, eh, bloggies? ๐Ÿ™‚ I have not one, but two days for y’all!

(Funny that this week’s icon has a faint image of sushi in the background; you’ll see that farther down!)

But first things first.

Wednesday!

Free fruits + veggies, plus some unpictured mini pizzas

Spinach, pear, walnut, & blue cheese salad

(Blue cheese and me? Not friends.)

Pruuuunes!

Cafe au lait with soymilk

(One of my best friend’s names, Jasseigh, is on my mug)

Oatmeal with protein powder, maca, & prunes (yeah…our fruit supply is officially depleted)

Tuesday!

Sushi with avocado, cucumber, red pepper, scallion + pineapple

Tea x2

Mixed greens & carrots with artichoke hearts & an egg, drizzled in balsamic vinegar

Banana, side of Arabic

Whole wheat molasses bread with peanut butter, orange

(Didn’t even need the orange that morning; that bread filled me UP!)

Monday (dinner)

Mixed greens & carrots with nutritional yeast & socca

Cut to: mountain scenes!

(They’ve been camera-shy lately. Boo!)

End scene: sleepy roommate.

That’s all for now, folks.

What was the highlight of your Wednesday?

I was able to identify Meatloaf’sย “Paradise by the Dashboard Light” at Trivia Night! The song is great…as long as you don’t picture Meatloaf himself doing what he’s singing about. Hehe ๐Ÿ˜‰

A Mili

When you start the day off with this song:

That’s a sign you’re coming off a pretty badass weekend.

Yeah, I’ll explain that in a bit…

Here’s what went down!

My rugby team won our Sunday game…

47-0

What up! As usual, I’m sore and bruised all over.

However, another teammate of mine broke her wrist during a scrimmage on Thursday, so I’m pretty darn thankful to be intact.

(By the way, how did I manage to bruise a toenail? It’s my big toe. It hurts and it’s making movement annoyingly difficult.)

  • My college’s annual “Drag Ball” happened, and since I had a rugby game the next day, I did not drink for it. Seeing guys dressed as girls is funny when you’re sober, but admittedly much more hilarious when you’ve got a couple shots in you.

Dressing our guy friends up

I grabbed my roommate’s kimono and dubbed myself…

” a young samurai in training…in his evening wear.”

It’s a very mature college event.

  • I snagged a suhweeet pair of cowboy boots at the thrift store for $9.99. Yay bargain shopping!

We almost bought this hula hoop, too.

  • On a random baking whim, I made molasses bread. It showed me that I haven’t baked lately…and it shows, haha! But I’ll get back into it soon.

I made up for it with more beautiful food over the weekend.

Starting with the best quiche I’ve ever had:

(and a GUY made it!)

Post-rugby salad:

Mixed greens, nutritional yeast, rosemary & tumeric socca

1/2 a Pita Pit hummus wrap with tzatziki sauce

(I am being fed so well by Arabic department events! This was a Tunisian Revolution information session.)

Feast in the dining hall:

Shards of a blueberry muffin:

And…you had to know this was coming…

Yurp, green monsters galore! I think I had 3 in 3 days. Win!

1 orange, spinach, protein powder, cinnamon, water (skimpy but swell!)

The norm: banana, spinach, protein powder, almond milk, cinnamon

I’m off to ballet and the gym, where I will continue to extend my badass-ness from the weekend!

Holla! Have a great day!

Tell me one awesome thing you did this weekend.

“You just gotta keep livin’, man! L-I-V-I-N.”

I’ve said it before, and I’ll say it again:

I have so many things in my life to be grateful for.

I love books, but one exceptionally great thing about movies is that you can learn a meaningful lesson from them, super quickly!

The movie we watched today in class was no exception. It was a film about boys living on the street in Morocco, and a group of friends trying to bury their recently-deceased friend.

  • “Life is beautiful!” > “Life is a pile of shit!”
  • Rugby team family > Gang family led by abusive deaf & mute older boy
  • Living in a college apartment > Squatting on a corner of the dock
  • Getting bruised from tackles > Getting killed by a thrown stone
  • Watching your friend break her wrist > Watching your friend get his throat slit
  • Working as a summer camp counselor > Selling random trinkets to drivers stuck in traffic
  • Eating a spectrum of delicious foods > Living off of stolen fish
  • Enjoying life on earth > Fantasizing about life after death I don’t know if I should be sharing this so openly, but y’all are a truly lovely group of readers, so here goes: I don’t think about the afterlife because I love my life on earth too much to want anything more. My afterlife views in a nutshell! Endofstory.

It was especially good to see this earlier in the day, because in my team’s first rugby scrimmage of the season today (!) one of my best friends broke her wrist. Ahh! I didn’t see it up close, but I watched it happen.

The Air Force Academy: such a pretty place to play, until the sun sets behind the mountains.

And God help whoever gets in her way once she’s on the field again. She will be one vicious woman.

These are my legs Wednesday. Tomorrow they'll be much more spotted!

Oh, life.

No fear! There’s still food. Can’t you appreciate it a little more now? ๐Ÿ˜‰

Sauteed onions & green bell peppers with nutritional yeast & balsamic vinegar

Mixed greens & carrots with a tarragon & goat cheese socca pancake

Grilled veggies with hummus, salad with wheatberries, whole wheat bread

And the standard pb & banana oats, transported to school.

And of course,

shenanigans in the sunshine.

“You just gotta keep livin’, man! L-I-V-I-N.”

(name that movie??)

What’s one thing you’re grateful for in your life?

(Food included, or not!)
